 Hot Honey Grilled Chicken Skewers

Cajun-seasoned chicken thighs grilled to perfection with a glossy hot honey glaze made from Frank’s RedHot and butter.

 Ingredients

For the Chicken Skewers:

  • 3 lbs chicken thighs, cut into 1.5″ cubes

  • 3 tbsp Cajun seasoning

  • Wooden or metal skewers

For the Hot Honey Glaze:

  • ½ cup Frank’s RedHot sauce

  • 1 stick (½ cup) unsalted butter

  • ½ cup honey

For Garnish:

  • Fresh chives, chopped


 Why Chicken Thighs?

Chicken thighs stay juicy and flavorful under high heat due to their higher fat content and marbling. They’re less likely to dry out compared to breasts, making them perfect for grilling.


 Instructions

Step 1: Prep the Chicken

  • Bring chicken thighs to room temperature (~15–20 min).

  • Cut into 1.5-inch cubes. Remove excess fat, but keep some marbling.

  • Toss with Cajun seasoning in a large bowl to coat evenly.

Step 2: Skewer the Chicken

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  • Thread 4–6 chicken pieces per skewer, leaving slight gaps for even cooking.

Step 3: Make the Hot Honey Glaze

  • In a saucepan over medium heat, melt the butter.

  • Whisk in Frank’s RedHot, then add honey.

  • Simmer for 2–3 minutes until glossy and slightly thickened. Stir often.

  • Remove from heat and whisk occasionally to maintain consistency.

Step 4: Preheat the Grill

  • Heat grill to 375–400°F (medium-high).

  • Clean and oil grates well to prevent sticking and achieve nice grill marks.

Step 5: Grill the Skewers

  • Place skewers perpendicular to grill grates.

  • Grill for 12–15 minutes, turning every 3–4 minutes.

  • Internal temperature should reach 165°F.

  • Don’t overflip—let the chicken brown and develop a crust.

Step 6: Glaze the Skewers

  • During final 3–4 minutes, brush skewers with hot honey glaze.

  • Allow to caramelize and get sticky without burning. Turn once more.

Step 7: Rest the Skewers

  • Transfer to a platter, tent loosely with foil, and rest 2–3 minutes.

Step 8: Garnish & Serve

  • Sprinkle with fresh chopped chives.

  • Serve hot with sides like coleslaw, grilled corn, or cornbread.

  • Optional: Serve extra glaze on the side for dipping.
