Mango Mousse (Low Sugar)

Ingredients:

  • 2 ripe mangoes (about 2 cups of mango puree)
  • 1/2 cup Greek yogurt (plain, unsweetened)
  • 1/4 cup heavy cream
  • 2 tablespoons honey or 1-2 tablespoons stevia (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • 1 tablespoon unflavored gelatin (optional, for a firmer texture)
  • 2 tablespoons cold water (for gelatin, if using)

Instructions:

  1. Prepare the Mango Puree:
    • Start by peeling the mangoes and cutting the flesh away from the pit. Dice the mango flesh into small cubes.
    • Place the mango cubes in a blender or food processor and blend until you have a smooth puree. You should end up with about 2 cups of mango puree.
    • If the puree seems too thick, you can add a tablespoon of water to help with blending.
  2. Sweeten the Puree:
    • Transfer the mango puree to a bowl and add the honey or stevia. Stir well to combine.
    • Taste the mixture and adjust the sweetness according to your preference. If the mangoes are naturally sweet, you may need less sweetener.
  3. Incorporate the Lime Juice:
    • Add the fresh lime juice to the sweetened mango puree. The lime juice adds a tangy brightness that balances the sweetness and enhances the mango flavor.
    • Mix the puree well and set it aside.
  4. Prepare the Gelatin (Optional):
    • If you prefer a firmer mousse, dissolve 1 tablespoon of unflavored gelatin in 2 tablespoons of cold water. Let it sit for a few minutes to bloom.
    • Once bloomed, gently heat the gelatin in the microwave for 10-15 seconds or on the stovetop until it dissolves completely.

  8. Chill the Mousse:

    • Smooth the tops with a spatula for a neat presentation.
    • Cover the mousse with plastic wrap and refrigerate for at least 2-3 hours, or until set. If you added gelatin, the mousse will firm up more as it chills.
  9. Garnish and Serve:
    • Before serving, you can garnish the mango mousse with a variety of toppings to add texture and visual appeal.
    • Consider adding fresh mango slices, a sprinkle of chopped mint, a dollop of whipped cream, or a few raspberries.
    • For a bit of crunch, you could also add a sprinkle of toasted coconut flakes or crushed nuts.
