Embark on a flavorful adventure with our cherished Cosmic Beans recipe, lovingly referred to as “Chemo Casserole” for its origins in providing nourishment and comfort. Packed with protein and rich in heartwarming flavors, this dish is more than a meal—it’s a symbol of resilience, tradition, and care.

The Legacy of Cosmic Beans

This recipe, initially created to support those undergoing treatment, evolved over generations to reflect a blend of love, innovation, and culinary artistry. Renamed Cosmic Beans for its universal appeal and otherworldly taste, it continues to grace tables as a symbol of strength and comfort.

Ingredients

  • 1 lb diced bacon
  • 1 lb ground beef, browned
  • 1 medium onion, diced
  • 1 can butter beans, drained
  • 1 can kidney beans, drained
  • 1 can pork n beans (avoid Van Camps)
  • 1/2 cup ketchup
  • 1 tsp dry mustard or 2 tsp regular mustard
  • 3 tbsp vinegar
  • 5 heaping tbsp brown sugar

Instructions

Cooking Cosmic Beans

  1. Crisp the Bacon
    • Cook diced bacon in a large pot until golden and crispy. Set aside.
  2. Brown the Beef
    • In the same pot, brown the ground beef until fully cooked. Remove and set aside.
  3. Sauté the Onion
    • Add the diced onion to the pot and sauté until translucent and fragrant.
  4. Combine Ingredients
    • Return the bacon and beef to the pot.
    • Add butter beans, kidney beans, pork n beans, ketchup, mustard, vinegar, and brown sugar.
  5. Simmer and Blend
    • Heat the mixture on medium, stirring occasionally, until all ingredients meld into a rich, flavorful dish.

Canning Cosmic Beans

  1. Prepare the Jars
    • Sterilize 12 pint jars (or equivalent) along with lids and rings.
  2. Fill the Jars
    • Ladle the hot Cosmic Beans mixture into the jars, leaving 1 inch of headspace.
  3. Clean and Seal
    • Wipe the rims with white vinegar to ensure a clean seal. Secure lids and rings until fingertip tight.
  4. Pressure Can
    • Follow your pressure canner’s instructions. Vent for 10 minutes, then process:
      • Pints: 75 minutes
      • Quarts: 90 minutes
  5. Cool and Store
    • Let jars cool completely on a flat surface. Listen for the “pop” of the lids sealing.
    • Store in a cool, dark place until ready to enjoy.
