Introduction

Jello Cheesecake Cups are a fun, colorful, and delightful no-bake dessert that combines the creamy richness of cheesecake with the fruity, vibrant flair of Jello. Whether you’re hosting a summer party, making something kid-friendly, or simply want a light and refreshing treat, these individual-sized cups are a show-stopper.

 

This recipe is great for beginners and can be made in advance, making it perfect for gatherings, potlucks, or even a weeknight indulgence. The layered look also makes it Instagram-worthy — so don’t forget to snap a pic before you dig in!

 

Ingredients

For the Graham Cracker Crust Layer:

  • 1 ½ cups graham cracker crumbs (about 10–12 crackers)

     

  • 5 tablespoons unsalted butter, melted

  • 2 tablespoons granulated sugar

For the Cheesecake Layer:

  • 1 package (8 oz) cream cheese, softened

  • ½ cup powdered sugar

  • 1 teaspoon pure vanilla extract

  • 1 cup heavy whipping cream (cold)

     

For the Jello Layer:

  • 1 box (3 oz) flavored Jello (strawberry, raspberry, cherry, or your choice)

  • 1 cup boiling water

  • ½ cup cold water

  • ½ cup ice cubes

Optional Toppings:

  • Whipped cream

  • Fresh fruit (strawberries, blueberries, kiwi, etc.)

  • Mint leaves

  • Crushed graham crackers

Kitchen Tools You’ll Need

  • Mixing bowls

  • Electric hand mixer or stand mixer

  • Rubber spatula

  • Measuring cups and spoons

  • Spoon or small ladle

  • Clear dessert cups or small jars (6 to 8)

Preparation Steps

Step 1: Prepare the Graham Cracker Crust

  1. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.

  2. Stir until the mixture resembles wet sand and holds together when pressed.

     

  3. Spoon about 2 tablespoons of the crust mixture into each dessert cup.

  4. Use the back of the spoon or your fingers to press the mixture firmly into the bottom.

  5. Place the cups on a tray and refrigerate while preparing the filling

     

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the softened cream cheese until smooth and creamy (about 2–3 minutes).

  2. Add powdered sugar and vanilla extract, and beat until well combined.

  3. In a separate bowl, whip the cold heavy cream until stiff peaks form (about 3–4 minutes).

     

  4. Gently fold the whipped cream into the cream cheese mixture using a spatula. Fold until just combined and smooth.

  5. Spoon or pipe the cheesecake filling over the graham cracker crust in each cup, filling them about halfway to two-thirds full.

  6. Tap cups gently on the counter to smooth the tops.

     

  7. Return the cups to the fridge while you prepare the Jello.


Step 3: Prepare the Jello Layer

  1. In a bowl, dissolve the Jello powder in 1 cup of boiling water. Stir until completely dissolved (about 2 minutes).

  2. Add ½ cup cold water and ½ cup ice cubes to the mixture. Stir until slightly thickened (the ice will help it cool and set faster).

     

  3. Once it’s slightly cooled but still pourable, slowly pour or ladle the Jello over the cheesecake layer in each cup.

  4. Refrigerate the cups for at least 2 to 4 hours, or until the Jello is fully set.

Step 4: Add Toppings and Serve

Once the Jello has set, top each cup with a swirl of whipped cream, fresh fruit, or extra graham cracker crumbs if desired.

 

Serve chilled with a spoon and enjoy!

  • Use clear cups for the most beautiful presentation. The vibrant layers will stand out!

  • Make sure the cream cheese is fully softened to avoid lumps in your cheesecake layer.

  • Allow the Jello to cool slightly before pouring it over the cheesecake to prevent melting or separation.

  • Store covered in the refrigerator for up to 3–4 days.

  • Do not freeze, as Jello does not thaw well and the texture may be compromised.
