Ingredients

  • Olive oil spray for greasing
    2 tablespoons of olive oil
    2 pounds of extra-lean ground beef
    1 medium onion, finely chopped (approximately 6 ounces)
    2 teaspoons of  Diamond Crystal kosher salt or 1 teaspoon of any other salt
    ¼ teaspoon of black pepper
    1 tablespoon of fresh garlic, minced
    ¼ cup of mayonnaise
    ¼ cup of unsweetened ketchup
    1 tablespoon of mustard
    1 ½ cups of sharp cheddar cheese, shredded (approximately 6 ounces)

Directions

  • Preheat your oven to 400°F and spray a 2-quart baking dish with olive oil.
  • Heat olive oil in a large skillet over medium-high heat for about 2 minutes. Add ground beef and onions, cooking until the beef is browned and the onions are soft (approximately 5 minutes).
  • If there is excess liquid in the skillet, drain it carefully before returning it to the heat. Stir in kosher salt, black pepper, and garlic, cooking for an additional minute.
  • Turn off the heat and mix in mayonnaise, unsweetened ketchup, mustard, and 1 cup of shredded cheddar cheese.
  • Transfer the mixture to the prepared baking dish and sprinkle with the remaining cheese.
  • Bake until the cheese is melted and the casserole is heated through (approximately 15 minutes). Alternatively, if your baking dish is broiler-safe, broil the casserole 6 inches below the heating element until the cheese is melted (1-2 minutes).
