Ingredients

  • 2 Weetabix

  • 2 tablespoons fat-free natural yogurt

  • 1 apple, chopped

  • ½ teaspoon mixed spice

  • 160g fat-free no-added-sugar vanilla yogurt

  • 2 pinches ground cinnamon, for topping

Optional toppings (before serving):

  • Fresh mint

  • Drizzle of honey or ChocShot

  • Crushed nuts (e.g., almonds or walnuts)

  • Extra sliced fruit (apple, banana, berries)

Step-by-Step Instructions

Step 1: Crush the base
Place 2 Weetabix in a bowl and crush them using your hands or a fork. Stir in 2 tablespoons of fat-free natural yogurt until fully combined and slightly sticky.

Step 2: Press into glass
Spoon the mixture into the bottom of a dessert glass or small bowl. Press down firmly to form a compact cheesecake-style base.

Step 3: Prep the apple
Chop 1 apple into small pieces and warm it gently in a pan or microwave for 1–2 minutes with ½ teaspoon of mixed spice. This helps soften the fruit and enhances the apple pie flavor.

Step 4: Add creamy layer
Spoon 160g of fat-free, no-added-sugar vanilla yogurt over the Weetabix base to form a smooth, creamy layer.

Step 5: Layer on apples
Top the yogurt layer with the warm spiced apples, spreading evenly.

Step 6: Chill overnight
Cover the dessert and refrigerate overnight to allow the layers to set and flavors to blend.

Step 7: Serve and finish
Before serving, sprinkle with a pinch or two of ground cinnamon. Optionally, garnish with fresh mint, a drizzle of honey or ChocShot, or a few crushed nuts for extra texture and flavor.
