These Twice-Baked Loaded Steak Potatoes are the ultimate comfort food. Seasoned with our new Black Chile Coffee Cocoa Rub from our collab with Pitmaster Rodney Scott, you need to save this recipe for your next backyard BBQ, game day spread, or cozy night in.

  Twice-Baked Loaded Steak Potatoes

Featuring our Black Chile Coffee Cocoa Rub (Rodney Scott Collab)

 Ingredients:

  • 2 russet potatoes

  • 1 lb ribeye steak, thinly sliced

  • 1 Tbsp olive oil

  • 2 tsp Black Chile Coffee Cocoa Rub

  • 2 Tbsp scallions, thinly chopped

  • ½ stick of butter (4 Tbsp)

  • ½ cup sour cream

  • ½ cup shredded cheese (cheddar, monterey jack, or your favorite blend)

  • 2 Tbsp steak sauce

  • Preparation Instructions:

    1. Preheat the grill to 375°F.
      While it heats, puncture each potato 4 times on each side with a fork or knife. Brush with olive oil and wrap tightly in foil.

    2. Season the steak with Black Chile Coffee Cocoa Rub.
      Grill thinly sliced ribeye for 1–2 minutes per side, or until done.
      (Note: If using a whole steak, grill for about 15 minutes total, flipping halfway.)
      Remove from heat and slice into bite-sized pieces. Keep the grill on.

    3. Grill the potatoes for 1½ hours, or until fork-tender.

    4. Remove potatoes, slice them open lengthwise, and carefully scoop out the insides into a bowl. Try to leave the skins intact.

    5. To the bowl, add butter, sour cream, shredded cheese, scallions, steak sauce, and ¾ of the cooked steak. Mix until well combined.

    6. Scoop the mixture back into the potato shells. Top each with a pinch of cheese, then place them back on the grill until the cheese melts (about 5–10 minutes).

    7. Remove from grill, top with remaining steak and extra scallions. Serve hot & enjoy!
