This recipe uses a Thermomix to create a unique “magic” vanilla cake with three distinct layers.

Ingredients:
- 500g whole milk
- 1 vanilla pod, split
- 4 eggs, separated
- 120g powdered sugar
- 15g vanilla sugar
- 1 teaspoon water
- 115g all-purpose flour
- 125g butter, melted
- Pinch of salt
Equipment:
- Thermomix
- 20cm round cake pan (springform recommended)
- Spatula
- Plastic wrap

Infuse the milk: Place the milk and split vanilla pod in the Thermomix. Cook for 8 minutes at 70°C on speed 2. Transfer the infused milk to a bowl, cover with plastic wrap, and set aside. Wash and dry the Thermomix bowl.

Combine egg yolks and sugar: Insert the butterfly attachment into the Thermomix. Add the egg yolks, powdered sugar, vanilla sugar, and water. Mix for 3 minutes on speed 4.

Add melted butter: Melt the butter in the microwave or a saucepan. Add the melted butter to the Thermomix bowl. Mix for 2 minutes 30 seconds on speed 4. Remove the butterfly attachment.

Incorporate flour and milk: Add the flour and a pinch of salt to the Thermomix. Mix for 15 seconds on speed 5. Add the reserved infused milk (discarding the vanilla bean). Mix for 30 seconds on speed 5. Transfer the mixture to a bowl and set aside. Wash and dry the Thermomix bowl.

Whip egg whites: Add the egg whites and a pinch of salt to the Thermomix. Insert the butterfly attachment. Mix for 3 minutes on speed 3.5. Remove the butterfly attachment.

Fold in egg whites: Gently fold the whipped egg whites into the yolk mixture in three additions, using a spatula. Don’t overmix; some lumps are okay. This is what creates the distinct layers.

Bake: Grease and lightly flour a 20cm springform cake pan. Pour the batter into the prepared pan and tap it on the counter to release any air bubbles. Bake at 150°C (300°F) for 50 minutes.

Cool and chill: Let the cake cool completely in the pan. Then, cover and refrigerate for at least 2 hours before serving. This chilling time is crucial for the layers to set properly.
